| Feta & Tomato Spread, Hot | Serves | 4 |
| Preheat broiler. Crumble feta and spread evenly in shallow 2 c baking dish. Thinly slice tomatoes crosswise and arrange, overlapping
if necessary, on feta. Drizzle oil over tomatoes and sprinkle w oregano and pepper. Broil 2-3 inches from heat until cheese is bubbling,
5-8 minutes Serve w pita toasts. |
| Feta Walnut Cheesecakes | Serves |
| Preheat oven to 350 and butter 18 1/8 c mini-muffin cups. In medium bowl, combine the bread crumbs, nuts, butter, 1/4 tsp salt and 1/4
tsp pepper and stir until thoroughly combined. Spoon a heaping teaspoon of mix into each cup and press down into the bottom of the
cups. With an electric mixer, beat the cream cheese until light and fluffy. Add goat cheese and beat until creamy. Add egg and beat
until well combined. Add chives, remaining salt and pepper. Divide mix among the cups and smooth the tops. Set a walnut piece on top
of nine of the cakes. Top remaining cakes w diced red pepper. Bake until puffed, about 15 min. Let cool 5 min, then unmold. Garnish w
chives and serve warm. |

Figs, Grilled w Prosciutto,
Walnuts & Lemon Mint Cream
Finely chop 1 handful mint and place in mortar w lemon juice. Pound &
strain. Add heavy cream. Stir Halve 8 ripe figs and place walnut half on cut
side of each. Wrap slice of prosciutto around each. Grill 30-45 seconds per
side. Serve w sauce and sprigs of mint.

Fruity Cheese Pineapple
Serves 25
| Combine grated cheese, cream cheese, butter, lemon juice, drained pineapple, almonds and chopped cheries. Chill. Form into
pineapple shape and roll in mix of cinnamon and sugar. Mark all over with spoon and top w/ pineapple crown. |
